Gluten-free Brazilian Cheese Bread

Makes 12 rolls

Dry Ingredients
• ½ cup Tapioca Flour
• ½ cup of Cotija cheese
• ½ cup of mozzarella cheese
• ¼ cup of parmesan cheese
• ½ tablespoon of salt
• 1 teaspoon of baking powder

Wet Ingredients
• 1 large egg
• ¼ cup of olive oil
• 2/3 cup almond milk


Preheat oven to 400o F
Grease a standard muffin pan with non-stick cooking spray.
Combine all ingredients in the blender – except the baking powder and blend until everything is combined, making sure to scrape the sides with a spatula to include all the dry ingredients.
Add the baking powder and mix with the spatula, without turning on the blender.
Pour the batter into the muffin tins, filling each one just halfway.
Bake for about 15min, or until it is golden. Enjoy warm with some butter or cream cheese.
