Yogurt cupcakes

Makes 12 cupcakes

Dry Ingredients

  • ¼ cup of unsalted butter
  • ½ cup of water
  • ¼ cup of cocoa powder
  • ½ cup of xylitol
  • 1 ¼ cups of quinoa flour
  • ½ tablespoon of baking soda
  • ½ tablespoon of baking powder
  • ½ teaspoon of salt

Wet Ingredients

  • 2 large eggs, separated
  • ½ tablespoon of vanilla extract
  • ¼ cup of coconut yogurt


Preheat oven to 375 F

Combine butter and water in a saucepan. Bring to boil, remove from heat, and whisk in the cocoa powder. Sift together the xylitol, quinoa flour, baking powder, baking powder, baking soda and salt. Add and mix well the cooled cocoa mixture, egg yolks, vanilla and coconut yogurt

Beat the egg whites until stiff, but not dry. Fold into batter.

Spoon into a muffin tin lined with paper liners,

Bake for 20min.
